      Observed time/temperature control for safety foods (shelled eggs) at improper cold holding temperatures in prep area at 86.7f ranging. Instructed to discard and denature said tcs foods and to maintain a cold holding temperature of 41f at all times. Priority violation.7-38-005. Citation issued.

      Observed facility using unpasteurized eggs noted facility is cooking eggs to order (over easy, sunny side up) instructed to stop this practice faciity must only use pasteurized egg product as facility serves immuno-compromised individuals and highly susceptible population. Priority violation 7-38-005

Previous core violations not corrected: (#51) 5-205.15: **c** system maintained in good repair (in good repair) observed the base of the faucet to be leaking at the 3 compartment sink next to the dish machine. Observed the faucet base/extension for sprayer hose at 2 compartment sink next to walk in coolers to be leaking when in use. Must correct core violations by the date on the report. Priority foundation violation #7-42-090. Citation issued.
